Koshi Sushi is a family run business that commenced operating in September 1998. Since opening, the business has grown substantially and is now one of the largest sushi manufacturers in Melbourne. The Product
Sushi is a representative food of Japan that dates back at least 1000 years. In its most common form it is a finger of vinegared rice garnished with either sliced raw fish or non-seafood garnish such as cooked egg. This form of sushi is known as nigiri.
Another popular form of sushi is norimaki (seaweed roll) which consists of narrow strips of seafood and/or vegetables arranged on a layer of vinegared rice. The layer or sheet of rice is spread on a sheet of nori (toasted seaweed) and rolled. The roll is cut into rounds (nori roll) convenient for serving.
The Market
The food industry show a strong trend towards eating light and healthy foods. Sushi combines carbohydrates and protein with very little fat and therefore fits perfectly with the current trend in health consciousness. Sushi is not only healthy but also convenient and easy to eat. Independent market research shows that the local market for readyt to eat fresh food, such as sushi, is growing rapidly.
The Semi-Automated Production System
Koshi uses a highly sophisticated semi-automated system developed by the Japanese. The system automatically weighs, washes and cooks the rice before it is placed into either the sushi or nori robot which helps to shape the final product. Koshi has the ability to produce up to 20,000 + pieces of sushi per day. |
