In today’s food safe environment, it is important to know how your sushi is manufactured; there are many sushi manufacturers, but ask yourself the question, are they HACCP certified and how food safe are they?

If buying sushi from a wholesale manufacturer you owe it to yourself and your customers to do the following:

  • Ask if they use refrigerated vehicles?
  • Ask if they microbiologically test their products?
    (If “yes” ask for copies of the results).
  • Obtain a copy of their HACCP certification for your records.
  • Use due diligence and ask for an “on site” visit.
  • Obtain details of their public liability insurance (a copy of their certificate of currency).
